SERVES 8
-900g/2lb sweet potatoes;
-250 ml/8fl oz/1 cup orange juice;
-50ml/2fl oz/1|4 cup maple syrup;
-5ml/1tsp freshly grated root ginger;
-7.5 ml/1 1|2 tsp ground cinamon;
-6.5 ml/1 1|4 tsp ground cardamon;
-2.5 ml/1|2 tsp salt;
-ground black pepper;
-ground cinamon and orange segments, to garnish.
1. Preheat the oven to 180C/350F/Gas4. Peel and dice the potatoes and then steam for 5 minutes.
2. Meanwhile, stir the remaining ingredients together. Spread out on a non-stick shallow baking tin (pan).
3. Scatter the potatoes over the baking tin. Cook for 1 hour, stirring every 15 minutes, until they are tender and well coated in the spicy syrup.
4. Serve garnished with orange segments and ground cinnamon.
